One of our spring projects was to raise a flock of geese for training herding dogs. We chose Toulouse Geese.
There are several types of geese that are called Toulouse. The standard "production" goose is the kind found on small farms. The "production" Toulouse is a normal grey goose, average weight is between 18 and 20 pounds. The standard dewlap Toulouse can weigh as much as thirty pounds, but are normally in the 20 to 26 pound range. The dewlap toulouse is used for the production of fois gras. The exhibition toulouse is also a large goose with a dewlap and an exaggerated keel. The larger varieties are more subject to health problems. Our garden variety toulouse geese are able to forage for part of thier diet.
